Ingredients: 1 cup low-fat cottage cheese 2 small cloves garlic, minced (or more if you like) 1 cup low-fat (1%) milk 1 egg yolk 1/2 teaspoon fresh ground pepper 2 tablespoons butter 1/2 cup grated Parmesan cheese, divided 8 ounces fettuccine noodles 2 teaspoons chopped fresh parsley Directions: In blender, combine cottage cheese, milk, egg yolk and pepper.
